Ecology, genetic and physiology of microorganisms

Studies on physiology and genetic of microorganisms from agricultural and natural environment, characterization and monitoring the microbial community and their relation in different environment such as soil, water, plants, food, animals and agricultural waste, including the techniques application of traditional biochemical, molecular and nucleic acid analysis.

Microbial Biotechnology applied to environment and agriculture

Studies of process and development of the technologies based on microorganism’s metabolism for ecosystem recuperation, improvement of biological processes aiming to increase animal and plant production, and consolidation of the agribusiness sustainability. Knowledge and development of spontaneous fermentation processes used in the elaboration of different foods and beverages is also studied.

Microbial Quality and safety of foods

Evaluation and studies on critical points in all steps of production food and in the food processing or feedstock where toxigenic, pathogenic and deteriorative microorganism might grow. Analysis of dynamic of microbial population present in food and risk evaluation for environmental and health human and public health were also studied.
