The program presents of a single concentration area and two lines of research: “Food and Human Nutrition” and “Basic Nutrition and Metabolism.” These areas present a relationship between themselves when considering that research in the metabolism field can be used to confirm hypotheses raised by observational studies related to nutrition and human food, with subsequent application in individuals and communities. The area of Nutrition and Evidence-based Health Care has expanded in recent years as important strategy of promotion of new biological and potential human health care theories. Another important aspect is the association between the consumption of different dietary compositions and the occurrence of metabolic changes that interfere in the physiological and pathological responses of individuals. Assessment of the effects of different dietary compounds and specific nutrients extends the approach of nutritional therapy within the clinical and social scope, which stands out for their contributions to the understanding of the health-disease process. In addition, the development and characterization of food and bioactive compounds, which can be evaluated in human metabolism by means of clinical and experimental tests, provide the offer of products whose consumption can bring health benefits.
